Ingredients

  • 6 eggs
  • 100 ml whipping cream
  • 80 g feta
  • 2 tbsp olive oil
  • 1 handful fresh chives
  • Salt to taste
  • Pepper to taste
  • 1 red bell pepper
  • 100 g broccoli (florets)
  • 50 g frozen peas
  • 2 spring onions

Preparation

    Whisk eggs in a bowl with cream, salt, pepper, and chopped herbs.

    Heat oil in an oven-safe pan and briefly sauté the chopped vegetables.

    Pour the egg mixture over the vegetables and let it set over low heat for approx. 3–4 minutes.

    Sprinkle the surface with crumbled feta.

    Place the pan in the oven preheated to 180 °C and bake for 8–10 minutes until the surface is firm.
