Line a rectangular pan or a small baking sheet (approx. 20 x 30 cm) with parchment paper or cling film.

In a large bowl, combine the shredded coconut with the vanilla extract. Add the honey and 100 g of the melted coconut oil and mix everything thoroughly until a homogeneous mass is formed.

Spread the coconut mixture evenly in the prepared pan, press firmly, and let it set in the freezer for about 15–20 minutes.
Chef's tip
For a vegan version, you can simply replace the honey with maple syrup or agave nectar.
