Preparation method

Separate the eggs. Beat the egg yolks with milk, raisins, sugar, flour, and a pinch of salt until a smooth batter forms. In a separate bowl, beat the egg whites until stiff and carefully fold the egg whites into the batter.

Heat the butter in a large, oven-safe pan. Pour in the batter and first fry the Kaiserschmarrn over medium heat until golden brown on both sides.

Preheat the oven to 180 °C. Place the pan in the oven and bake the Schmarrn for about 10 minutes until it has risen nicely and is golden brown.
