Preparation method
Preheat the oven to 180 °C and line a baking sheet with baking paper.
Place spelt flour, cane sugar, butter, baking powder, egg, nutmeg, and a pinch of salt in a large bowl. Process everything into a smooth dough. Place the dough on the baking sheet and shape it into a flat loaf (approx. 1.5 cm high). Bake for 25 minutes at 175–180 °C.
Remove the sheet from the oven and diagonally cut the loaf into slices about 1 cm thick with a bread knife. Spread the slices on the baking sheet and bake them again for 5 minutes at 175–180 °C. Then turn the biscotti and bake them for another 5 minutes.
Chef's tip
Decorate the finished biscotti with some melted chocolate.
