Preparation method

Carefully melt the chocolate and margarine in a bain-marie. Mix the sugar with the vanilla sugar and stir into the chocolate mixture. Stir in the egg substitute (vEGGie) evenly.

Then add the flour (90 g) and a pinch of salt and mix everything into a smooth dough.

Lightly coat the sour cherries in the remaining flour (10 g). This prevents them from sinking to the bottom of the dough. Carefully fold the cherries together with the pecans into the dough.

Chef's tip

If you coat the cherries in a little flour before adding them, they will distribute better in the dough and won't sink to the bottom of the pan. This also prevents the fruit from burning.

Pecans can be wonderfully replaced by walnuts or pistachios. If you don't like nuts, you can also omit them entirely.
