Ingredients
- 480 g ripe Hass avocado
- 50 g red onion
- 14 g fresh garlic
- 50 g 100% lemon juice
- 10 g fresh basil
- 10 g fresh flat-leaf parsley
- 30 g mayonnaise

- 2 g table salt
- 1 g ground black pepper
Preparation
- 1Halve the avocados, remove the pit, and scoop out the flesh. Place the flesh together with the mayonnaise in a tall container and blend until creamy with an immersion blender.
- 2Peel the red onion and dice it very finely. Also peel the garlic and press it directly into the avocado mixture. Stir in the finely diced onion.
- 3Add 1–2 tablespoons of lemon juice, depending on your taste. Wash the fresh herbs (basil and parsley), shake them dry, chop them finely, and mix them into the spread.
- 4Mix everything well, season with salt and pepper, and serve immediately. It pairs excellently with fresh baguette or wholemeal bread.
Tip
For an extra fresh note, you can also add some lemon zest. The lemon juice also prevents the spread from turning brown quickly.
