
Vegan Brownies with Pecans and Cherries

Preparation method
Carefully melt chocolate and margarine in a bain-marie. Stir sugar and vanilla sugar into the chocolate mixture. Add the liquid egg substitute and mix well. Finally, stir in the flour (90 g) and a pinch of salt until a smooth batter forms.
Drain the sour cherries well, lightly coat them in the remaining flour (1 tbsp) and carefully fold them into the batter along with the pecans. The flour prevents the cherries from sinking to the bottom of the batter.
Pour the brownie batter into a prepared baking pan and bake in a preheated oven at 160 °C (top/bottom heat) for approx. 50 minutes.
Chef's tip
If you coat the cherries in a little flour before adding them, they will distribute better in the batter and won't sink to the bottom of the pan. This also prevents the fruit from burning.
Pecans can be excellently replaced by walnuts or pistachios. For a nut-free version, the nuts can simply be omitted.
