Preparation method
First, combine spelt flour, melted butter, honey, milk, eggs, lemon zest, and a pinch of salt in a medium bowl. The batter should have a smooth consistency, similar to pancake batter. Cover the bowl and let it rest in the refrigerator for about 30–45 minutes.
About 10 minutes before the end of the resting time, preheat the oven to 180 °C (top/bottom heat). Prepare six small gratin dishes (approx. 150 ml capacity).
Distribute the forest berries evenly among the dishes and pour the chilled batter over them. Place the dishes in the oven and bake at 170–180 °C for approx. 30–35 minutes until golden brown.
Chef's tip
Instead of forest berries, you can also use other fruits – simply cut them into small cubes. The cake can also be baked in a large dish (approx. 25 cm diameter).
