Wash the vegetables thoroughly. Quarter the tomatoes. Also quarter the apples, remove the core, and cut them into smaller pieces. Peel and quarter the onions.

Place the prepared vegetables in a large pot. Add cloves, allspice, peppercorns, and bay leaves. Simmer over medium heat for about 45 minutes, stirring occasionally.

Straining & Preserving

Purée the mixture with an immersion blender and then strain it through a fine sieve to remove seeds and skins. Return the mixture to the pot.

Chef's tip

For the best aroma, use fully ripe beefsteak tomatoes. The apples not only provide sweetness but also a natural binding due to the pectin they contain.
