Preheat the oven to 200 – 205 °C top/bottom heat. Line a baking sheet (approx. 30 x 40 cm) with baking paper.
Separate the eggs. Place the egg yolks in a bowl, the egg whites in a tall mixing vessel. In a large bowl, mix coconut flakes, potato starch, baking cocoa, and baking powder.
Add the egg yolks and 1 tablespoon of honey to the cocoa mixture and stir everything thoroughly with a whisk. Add a pinch of salt to the egg whites and beat them with a hand mixer or food processor until stiff (approx. 3 minutes). Carefully fold the egg whites into the cocoa mixture.
Chef's tip
For a particularly fine note, you can add some grated organic lemon zest to the quark filling.
The slices will stay fresh in the refrigerator in an airtight container for approx. 2-3 days.
