Preparation method
In a medium bowl, whisk together whole spelt flour, melted butter, honey, milk, eggs, lemon zest, and a pinch of salt. The batter should have a smooth consistency, similar to pancake batter. Cover the bowl and let it rest in the refrigerator for about 30-45 minutes.
About 10 minutes before the end of the resting time, preheat the oven to 180 °C (top/bottom heat). Prepare 6 small oven-safe ramekins (approx. 150 ml volume).
Distribute the forest berries evenly among the ramekins. Take the batter out of the refrigerator, stir briefly again, and pour over the berries. Place the ramekins in the oven and bake at 170-180 °C for about 30-35 minutes until golden brown.
Chef's tip
Instead of forest berries, you can also use other fruits – simply cut them into small cubes. The cake can also be baked in a large pan (approx. 25 cm diameter).
