Preheat the oven to 180 °C top/bottom heat. Grease a baking dish thoroughly with about 10 g of the softened butter. Cut the stale bread rolls into approx. 1 cm thick slices.

Wash the apples thoroughly, peel, quarter, core, and cut into thin wedges. Gently toss the apple wedges with 1 tsp of ground cinnamon, 20 g of the sugar, and the raisins in a bowl.

For the egg mixture, place the whole milk, whipping cream, 3 eggs, remaining 40 g of sugar, vanilla sugar, and a pinch of salt into a mixing bowl and whisk thoroughly with a whisk.

Chef's tip

Tip: For an especially fine flavor, you can also use leftover sweet braided yeast bread or brioche instead of regular bread rolls.

Alcohol-free juiciness: If you like, you can soak the raisins in a little warm apple juice beforehand to make them extra juicy.
