Preparation method
Cook pasta "al dente" according to package instructions. Then pour into a sieve, rinse with cold water, and drain. Roughly dice the tomatoes and place them in boiling water, bring to a boil, and cook for about 2 minutes. Then pour the cooked tomato pieces into a sieve and drain well.
Wash, dry, and finely chop the parsley. Roughly chop the almonds. For the vinaigrette, mix honey, mustard, and vinegar, then season with salt and pepper. Afterward, add the oil and mix well.
Combine the cooked pasta with tomatoes, capers, olives, almonds, and parsley. Reserve some parsley for later decoration. Then fold the vinaigrette into the pasta salad and let it sit for about 30 minutes to absorb the flavors. Stir the pasta salad several times during this resting period.
Chef's tip
To make your pasta salad even more flavorful, you can cook your pasta in broth instead of salted water. As an alternative to Parmesan, you can use mozzarella or feta.
