Preheat the oven to 180 °C top/bottom heat. Line a small baking pan (approx. 15 cm x 15 cm) with baking paper.

In a medium bowl, mix flour, baking powder, cardamom, and a pinch of salt. Add the kefir, egg white, rapeseed oil, finely grated lemon zest, 2 tablespoons of water, and vanilla extract, and stir everything into a smooth batter.

Pour the batter into the prepared pan and bake in the oven at 170–180 °C for approx. 30–35 minutes. Perform a skewer test!

Chef's tip

For a particularly fresh aroma, you can sprinkle the cake with finely chopped mint before serving.
