Ingredients

  • 100 g dates
  • 100 g almond flour
  • 50 g coconut flour
  • 1/2 tsp vanilla extract
  • 200 g The Coconut Collaborative Natural
  • 200 g soy quark
  • 30 g vanilla pudding powder
  • 1 tsp agar-agar
  • 2-3 tbsp agave syrup
  • 2 oranges

Crust Preparation

    Soak dates in warm water for 2 hours. Then finely grind dates with almond flour, coconut flour, and vanilla extract in a blender and press into a small springform pan (20 cm).

    Spread 100 g raspberries on the crust.

Cream Preparation

    For the cream, mix The Coconut Collaborative, soy quark, pudding powder, and agave syrup. Taste and add a little more agave syrup if needed.

    Mix agar-agar with a splash of milk and add to the cream. Pour the cream into a saucepan and bring to a brief boil.

    Let the cream cool slightly and pour it onto the crust. Chill for a few hours.

    Before serving, peel oranges, slice them thinly, and top the cheesecake with them.
