Preparation of the Fruit Layer
First, prepare 3 glasses or cups with a capacity of approx. 250 ml. In a small bowl, mix 8 g of gelatin powder with 50 ml of water and let the mixture swell for approx. 10 minutes.
Put the frozen forest berries with 15 ml of water into a pot and cook them over medium heat for 5–7 minutes until the fruit is soft.
Add the swollen gelatin (including the water) and 40 g of honey to the pot with the berries. Stir for 1–2 minutes until the gelatin has completely dissolved. Remove the pot from the heat, distribute the mixture evenly among the glasses, and let it set in the refrigerator for 2 hours.
Chef's tip
Before serving, garnish the panna cotta with a few fresh berries or mint leaves for an especially appealing look.
