Ingredients
- 8 pcs. Eggs
- 50 g Leek
- 200 g Cooked ham
- 125 g Mozzarella
- 40 g Baby spinach
- 1 tbsp Dried thyme
Preparation
- 1Preheat the oven to 200–205 °C and prepare a muffin tin (preferably silicone).
- 2Crack the 8 eggs into a large bowl and whisk well with a whisk.
- 3Wash the leek thoroughly, cut into fine strips, and add to the whisked eggs in the bowl.
- 4Cut the cooked ham, mozzarella, and baby spinach into small cubes or pieces and add them to the bowl as well.
- 5Add dried thyme and a pinch of salt and pepper, and mix everything well.
- 6Fill the egg mixture evenly into the muffin molds. Bake in the preheated oven at 200–205 °C for about 16–18 minutes until golden brown.
- 7Let the muffins cool briefly, remove from the mold, and serve warm or cold.
Tip
For a vegetarian option, you can simply replace the ham with diced bell peppers or sun-dried tomatoes.
