Preparation of the Fruit Layer
First, prepare three glasses or cups with a capacity of approx. 250 ml. In a small bowl, mix 8 g of gelatin powder with 50 ml of water and let the mixture swell for about 10 minutes.
Meanwhile, put the frozen forest berries with 15 ml of water into a pot and cook them over medium heat for 5–7 minutes until the fruits are soft.
Stir the 8 g of swollen gelatin (including the water) and 2 tablespoons of honey into the berry mixture. Cook everything for another 1–2 minutes until the gelatin has completely dissolved. Remove the pot from the heat, distribute the mixture evenly among the glasses, and place them in the refrigerator for 2 hours.
Chef's tip
Before serving, garnish the panna cotta with a few fresh berries or mint leaves for a particularly appealing look.
