Preheat the oven to 180 °C (top/bottom heat). Line a small baking pan (approx. 15 cm x 15 cm) with baking paper.

For the dough, combine whole wheat spelt flour, baking powder, ground cardamom, and a pinch of salt in a medium bowl. Add the kefir, egg white, rapeseed oil, finely grated lemon zest, 2 tablespoons of water, and vanilla extract, then mix everything until a smooth dough forms.

Pour the dough into the prepared pan and bake in the preheated oven at 170–180 °C for approx. 30–35 minutes. Do the skewer test!
Chef's tip
For an extra fresh touch, sprinkle the cake with some finely chopped fresh mint before serving.
