- 400 g spelt flour type 630
- 2 eggs (size M)
- 30 g liquid honey
- 30 g vanilla whey protein
- 300 g low-fat quark
- 80 ml rapeseed oil
- 220 ml sparkling mineral water

Preheat the oven to 180 °C top/bottom heat and line a baking dish (approx. 25 cm x 25 cm) with baking paper.

Sift the spelt flour into a large bowl. Add eggs, honey, vanilla protein, mineral water, and rapeseed oil. Mix with a food processor or a whisk until a smooth, slightly liquid batter is formed. Pour the batter into the dish and bake for approx. 50–55 minutes at 180–185 °C.

After baking, let the cake rest in the dish for 5 minutes. Then remove and let cool for at least 30 minutes. Finally, spread the surface evenly with low-fat quark, cut into portions, and serve.
