Preparation of the Mixture
Chop cranberries, candied pineapple, and pecans into small pieces. In a pan, melt the butter, add the flour, and stir well. Pour in the whipping cream and sweetened condensed milk, and simmer, stirring constantly, until the mixture thickens like pudding.
Stir the chopped fruits and nuts, along with the almond flakes, into the mixture and combine everything well. Then let the mixture cool down.
Baking
Meanwhile, preheat the oven to 150 °C top/bottom heat. Line a baking sheet with baking paper. Place small mounds of the mixture onto the sheet with a spoon and shape them into flat cookies. Bake the Florentines for approx. 30 minutes until golden brown and firm. Let them cool completely.
Chef's tip
For a particularly fine aroma, you can briefly toast the pecans in a dry pan before chopping them.
Store the Florentines in a cool, dry place in a tin box to keep them nice and crispy.
