Ingredients
- 30 g unsalted butter
- 30 g wheat flour Type 405
- 100 g candied pineapple
- 50 g dried cranberries
- 50 g almond flakes
- 50 g pecans
- 250 ml whipping cream 30%
- 400 g sweetened condensed milk
- 100 g dark chocolate
- 1 handful freeze-dried strawberries
- 1 handful unsalted pistachios
Preparation of the Mixture
- 1Chop cranberries, candied pineapple, and pecans into small pieces. In a pan, melt the butter, add the flour, and stir well. Pour in the whipping cream and sweetened condensed milk, and simmer, stirring constantly, until the mixture thickens like pudding.
- 2Stir the chopped fruits and nuts, as well as the almond flakes, into the mixture and mix everything well. Then let the mixture cool down.
Baking
- 1Meanwhile, preheat the oven to 150 °C top/bottom heat. Line a baking sheet with parchment paper. Place small spoonfuls of the mixture onto the sheet and shape them into flat cookies. Bake the Florentines for approx. 30 minutes until golden brown and firm. Let them cool completely.
Decorating
- 1Melt the dark chocolate in a double boiler. Spread the melted chocolate on the bottom of the Florentines. Crush the freeze-dried strawberries into a fine powder and sprinkle them, along with the chopped pistachios, over the still-wet chocolate. Let it set.
Tip
For a particularly fine aroma, you can briefly toast the pecans in a dry pan before chopping.
Store the Florentines in a cool, dry place in a tin box to keep them nice and crispy.
