Prepare & cook lentils
Rinse the red lentils thoroughly in a fine-mesh sieve with cold water until the water runs clear. Then place them in a pot with approx. 600 ml water, 1 tsp turmeric powder, and 1 tsp table salt, bring to a boil, and simmer gently over medium heat for about 15 minutes until tender and starting to break down. Briefly whisk until creamy.
Meanwhile, cook the basmati rice according to package instructions in double the amount of lightly salted water for approx. 12 minutes until cooked through, then keep warm covered.
Prepare & season curry
Peel and finely grate the ginger and garlic. Cut the tomatoes into small cubes. Halve the red chilli pepper lengthwise, deseed, and finely chop.
Chef's tip
For extra crunch, the peanuts can be briefly dry-toasted in a pan beforehand.
Reheated the next day, this lentil curry tastes even more flavorful as the spices meld together beautifully.
