Pluck the herb leaves from the branches. Soak the wooden skewers in cold water for about 10 minutes so they don't burn on the grill.

Cut the pork into approx. 3 cm cubes. In a bowl, mix with the herbs, 3 tablespoons of olive oil, a pinch of salt, and freshly ground pepper. Let the marinade sit in the refrigerator for 2 hours.

Grilling & Serving

Remove the meat from the marinade and thread evenly onto the wooden skewers. Halve the lemon.
