
Grilled Apricot Skewers with Pancetta and Smoked Cheese

Preparation method
Halve and pit the apricots. Wrap each smoked cheese string with a slice of pancetta. Thread alternately an apricot half, a wrapped piece of cheese, and a mini mozzarella ball onto the wooden skewers.
Preheat the grill to medium heat. Grill the skewers for about 8–10 minutes on all sides, until the pancetta is crispy, the apricots soften, and the cheese begins to melt slightly.
Meanwhile, prepare the dressing: Process basil with lemon juice, olive oil, salt, and pepper in a blender or mortar to create a fine sauce. Season to taste. If the lemon is very sour, add a pinch of sugar.
Chef's tip
If the lemon is very strong, a small pinch of sugar helps to perfectly balance the acidity.
