Ingredients
- 150 g Provolone cheese (whole piece)
- 1 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp chili flakes
- 2-3 cloves fresh garlic, thinly sliced
- 1 pinch ground black pepper
- 1 fresh baguette for serving
Preparation
- 1Preheat the grill to medium-high heat. If you don't have a grill, you can also use a cast-iron skillet or a grill pan on the stove.
- 2Cut the Provolone cheese into thick slices, about 1.5 to 2 cm thick. The cheese should retain its shape when grilled, so avoid slices that are too thin.
- 3Brush both sides of each cheese slice with olive oil. This prevents sticking and gives the cheese a beautiful golden color when grilled. Sprinkle the cheese slices with dried oregano, chili flakes, and black pepper.
- 4Make small incisions or pockets in the cheese with a knife and insert the finely sliced garlic cloves. This will give the cheese a delicious garlic aroma when grilled.
- 5Place the seasoned Provolone slices directly on the grill or in the grill pan. Grill the cheese for about 2–3 minutes per side, until grill marks are visible and the cheese begins to melt slightly.
- 6Once the Provoleta is nicely grilled and has a golden crust, remove it from the grill and arrange it on a serving plate. Serve the cheese plain or with crispy baguette slices for dipping.
Tip
For a particularly authentic aroma, you can prepare the cheese in a small cast-iron skillet directly on the grill. This will keep the melted cheese warm longer.

Servieren Sie die Provoleta sofort, solange der Käse noch heiß und flüssig ist. Ein Glas kräftiger Rotwein passt hervorragend dazu!
