Wash the classic eggplants and cut them lengthwise into slices. Salt them and let them release water briefly (sweat).

Preheat the grill to 250 degrees. Slice the halloumi cheese.

Grill eggplant slices, halloumi, cherry tomatoes, and mini eggplants for about 5 minutes on each side.

Chef's tip

Serve the sandwich warm directly from the grill for the best taste. Thai basil gives the dish a special anise note that pairs excellently with the teriyaki sauce.
