- 1 ripe pineapple
- 200 ml orange juice
- 50 ml Metaxa brandy
- 2 tbsp refined sugar
- 1 cinnamon stick
- Brown cane sugar for rolling

Preparation & Grilling

Peel the pineapple and cut into slices of equal thickness. Remove the hard core in the middle with a round cutter. Roll the pineapple slices in brown sugar and grill golden brown on both sides.
Caramelizing & Flambéing

In a pan, lightly caramelize the sugar. Deglaze with orange juice, add the cinnamon stick, and stir until the sugar has completely dissolved. Add the grilled pineapple slices to the pan and reduce the liquid by about one third. Pour Metaxa over it and carefully flambé.
Chef's tip
Serve the hot pineapple immediately with a scoop of vanilla ice cream for the perfect temperature contrast.
