Preparation
Take the fish out of the refrigerator about an hour before grilling so it can reach room temperature. This ensures more even cooking.
Clean the sea bream thoroughly and pat them dry. Make several shallow diagonal cuts on both sides of the skin. Peel and press the garlic, then mix it with the olive oil.
Season the fish generously with salt and pepper, both inside and out. Then rub them with the garlic oil, making sure the garlic mixture gets into the cuts. If desired, place a few lemon slices into the belly cavity.
Chef's tip
Use fish tongs for the grill so that the delicate skin of the sea bream doesn't stick to the grate and the fish doesn't fall apart when turning.
