Preparation method
Preparation & seasoning
Rinse the country-style ribs under cold water, pat thoroughly dry with paper towels, and trim any excess surface fat. Remove any remaining silver skin on the bone side.
Coat the meat thinly and evenly with the medium-hot mustard – this acts as the perfect binder for the spices. In a bowl, thoroughly mix the brown cane sugar, smoked paprika, garlic powder, fine table salt, and ground black pepper. Rub the country-style ribs generously on all sides with the rub and let sit at room temperature for about 30 minutes.
Indirect grilling & mopping
Preheat and adjust the grill for indirect heat to about 130 to 140 °C. Place the country-style ribs bone-side down in the indirect zone of the grill. Close the lid and let the meat cook gently for about 90 minutes.
Chef's tip
Country-style ribs are significantly meatier than classic spare ribs and benefit immensely from slow, indirect cooking. Regular spritzing with apple cider vinegar and apple juice keeps the meat wonderfully juicy.
For an even more intense smoky flavor, soaked wood chips (e.g., apple or hickory wood) can be added to the hot coals or placed in a smoker box at the start of cooking.
