Pat the pork tenderloin dry, remove any tendons, and cut into approx. 3–4 cm thick medallions. Finely chop the garlic cloves, strip the rosemary leaves from the stems, and chop them finely.
In a small bowl, mix the smoked paprika, brown cane sugar, chopped garlic, salt, and ground black pepper to create an aromatic BBQ rub. Rub the meat all over with the mixture.
Wrap each pork medallion tightly with bacon and secure with a toothpick if needed. Brush with a little vegetable oil.
Chef's tip
For extra smoky flavor, you can place some smoking wood (e.g., apple or hickory wood) on the coals while grilling.
This goes wonderfully with grilled corn on the cob, fresh baguette, or a crisp summer salad.
