Wash the peppers thoroughly and cut them in half lengthwise, including the stem. Carefully remove the core with a small knife, making sure to leave the stem on – this creates practical little pepper boats.
Drain the mozzarella and cut into approx. 1 cm cubes. Crumble the feta. Pluck the mint leaves from the stems and roughly chop. Mix the cheese and mint, season with a little salt if necessary, and fill the pepper halves with the mixture.
Grilling
Place the stuffed peppers skin-side down on the hot grill. Grill for about 5 minutes until the cheese has melted. Don't worry if the mozzarella releases some liquid – this is completely normal. The peppers should show slight char marks and bubbles on the bottom.
Chef's tip
For a spicy kick, you can sprinkle the peppers with a pinch of chili flakes before serving.
