Preheat the oven to 180 °C (top/bottom heat). Prepare a muffin tin for 12 muffins by lining it with paper liners.

Remove the core from the apple and grate it coarsely. Finely grate the carrot. Place both in a medium-sized bowl. Mash the banana with a fork until smooth and add it to the bowl as well.

Add the remaining ingredients (ground oats, ground almonds, apple sauce, and baking powder) and mix everything into a smooth batter. Fill the batter into the prepared muffin liners.
