Preheat the oven to 170 °C and line a baking sheet with parchment paper.

In a large bowl, beat cream cheese, egg, butter, and cane sugar until creamy with an electric hand mixer. Add lemon juice (and zest, if desired) and stir in.

Add whole wheat spelt flour, cornstarch, baking soda, and a pinch of salt and process everything into a smooth dough. Finally, gently fold in the frozen blueberries.
