Preheat the oven to 170 °C top/bottom heat and line a baking sheet with baking paper.

In a large bowl, beat cream cheese, egg, butter, and brown cane sugar until creamy with an electric hand mixer. Add lemon zest (optional) and lemon juice and stir briefly.

Add whole spelt flour, cornstarch, baking soda, and a pinch of salt and process everything into a smooth dough. Finally, carefully fold in the frozen blueberries so they don't get crushed too much.
