  • 12 pcs. Apricots
  • 160 g Smoked cheese braids
  • 16 slices wafer-thin Pancetta
  • 16 pcs. Mini mozzarella
  • 8 pcs. Wooden skewers
  • 4 tbsp Extra virgin olive oil
  • 1 handful Fresh basil
  • 1 pc. Lemon
  • 1 pinch Fine table salt
  • 1 pinch Ground black pepper

Preparation

    Halve and pit the apricots. Wrap each piece of smoked cheese with a slice of pancetta. Thread alternately an apricot half, a wrapped cheese piece, and a mini mozzarella ball onto the wooden skewers.

    Preheat the grill to medium heat. Grill the skewers on all sides for about 8–10 minutes until the pancetta is crispy, the apricots soften, and the cheese just begins to melt.

    For the dressing, finely process the basil with lemon juice, olive oil, salt, and pepper in a blender or mortar. Season to taste. If the lemon is too sour, add a pinch of sugar. Arrange the finished skewers on a platter, drizzle with the dressing, and serve. Fresh baguette and arugula pair well with this.
Tip
If the lemon is very sour, a small pinch of sugar in the dressing can work wonders.
