Ingredients

  • 8 Eggs
  • 4 Tomatoes
  • 2 red bell peppers
  • 2 Red onions
  • 2 tbsp Olive oil
  • 4 tbsp Tomato paste
  • 2 tbsp Oregano
  • 500 grams Feta
  • 160 grams rustic wheat bread
  • Salt
  • Ground pepper

Preparation

    Cut tomatoes, bell pepper, and onion into small cubes.

    Heat olive oil in a pan to sauté the onions. Add bell pepper and fry briefly. Then add the tomatoes and tomato paste. Season with oregano, salt, and pepper and transfer to a bowl. Crumble one half of the feta finely and the other half coarsely, then set aside.

    Add eggs to the already emptied pan and let them set slightly. Now spread the vegetables over the eggs and sprinkle the crumbled feta on top. Cover the pan to let the feta melt.

    Finally, sprinkle everything with oregano, serve in the pan with rustic wheat bread.
