Ein samtig-weiches Karottenpüree, das durch das langsame Einkochen in Gemüsebrühe und die Zugabe von reichlich Butter einen besonders intensiven und edlen Geschmack erhält. Die perfekte Beilage zu Fleisch, Fisch oder vegetarischen Gerichten.

Preparation method

Peel the carrots and cut them into coarse cubes. Place them in a pot with the vegetable broth, butter, and salt, and bring to a boil.

Reduce the heat and simmer the carrots over medium flame until they are soft and the liquid has almost completely reduced to a syrupy consistency.

Puree the mixture very finely with an immersion blender. For an exceptionally smooth result, then pass the puree through a fine sieve into a clean pot.
