Peel the ginger and cut it into thin slices.

In a small saucepan, mix 500 ml water with the sugar and lemon zest. Bring to a boil over medium heat and simmer until a syrupy consistency is achieved. Then add the ginger pieces.

Let the syrup cook for another 2 minutes, then let it cool completely at room temperature.
Chef's tip
For a particularly appealing look, you can also add fresh lemon slices and a few slices of fresh ginger directly to the glass.
If you strain the syrup through a fine sieve, it will keep for several weeks in a sealed bottle in the refrigerator and can be used at any time for a quick lemonade.
