Preparation method

Preheat the oven to 180 °C top/bottom heat. Line a loaf pan (approx. 23 cm) with baking paper or lightly grease it.

In a bowl, beat the eggs with the rapeseed oil and liquid honey until frothy.

Peel the ripe bananas and finely mash them together with the milk and vanilla extract (preferably with an immersion blender). Add the banana mixture to the egg mixture and stir well.

Chef's tip

Use very ripe bananas with brown spots on the peel – these are sweeter and easier to process.

For an extra crunchy touch, you can fold a handful of chopped walnuts into the dough.
