Ingredients
- 1kg Red Cabbage
- 6 tbsp Red Wine Vinegar
- 1 dash Apple Juice
- 200ml Red Wine
- 80g Cranberries
- 1 Bay Leaf
- 3 Cloves
- 2 Onions
- 1 dash Oil
- 1 tbsp Sugar
- 1 pinch Salt
- 1 pinch Pepper
- 1 Apple
Preparation
- 1First, halve the red cabbage and remove the core. Then, finely shred it, preferably with a vegetable slicer. Peel the apple and cut it into small pieces as well.
- 2Now mix the cabbage, apple, vinegar, apple juice, red wine, and cranberries. Add the bay leaf and cloves and let it stand for at least 2 hours, preferably overnight.
- 3Then, cut the onion into thin strips, sauté in oil. Add the sugar and melt until brown. Now add the cabbage mixture and let it simmer for 40 minutes. Finally, remove the cloves and bay leaf and season with salt & pepper.
Tip
The cabbage should not be overcooked, but still a bit crunchy. If the cabbage absorbs too much liquid during cooking, you can dilute it further with red wine or apple juice.
