Preparation method
Finely puree about half of the corn, leaving the rest whole. Mix the corn with eggs, flour, and baking powder. Season generously with salt and pepper.
Lightly grease a pan with oil and fry small fritters on both sides for about 2–3 minutes until golden brown.
In the meantime, prepare the dip: mix sour cream with a tablespoon of olive oil and finely chopped chives. Season with salt and pepper and refrigerate until serving.

For an extra spicy kick, you can add some chili flakes to the batter.
