Preheat the oven to 200 °C top/bottom heat and line a baking sheet with baking paper.

Prepare the marinade in a sealable container or bowl: Mix 100 ml balsamic vinegar, 20 ml olive oil, honey, and the finely pressed garlic. Season the marinade with some of the salt and pepper.

Place the chicken thighs in the marinade and turn them until fully coated. Let the meat marinate in the refrigerator while the oven preheats.
