Wash and clean the broccoli, then divide it into small florets. Peel and finely chop the onion. Cut the turkey breast fillet into strips.

Bring water to a boil in a pot, add the broccoli and cook over medium heat for approx. 5 minutes. Then drain and set aside.

Prepare the couscous according to package instructions: Pour boiling water over it (usually in a ratio of 1.6–2 parts water to 1 part couscous), cover and let it swell for approx. 10–15 minutes until the water has been completely absorbed.
Chef's tip
For an extra nutty note, you can briefly toast the couscous in a dry pan before letting it swell.
