Ingredients

  • 1 red onion
  • 1 avocado
  • half a mango
  • 150g cherry tomatoes
  • 125g mozzarella
  • 4 tbsp lime juice
  • Salt
  • Pepper
  • Chili powder
  • 50g arugula
  • 1 tsp liquid honey
  • 1 tbsp butter
  • 2 salmon fillets (150g each)

    Dice the onion, avocado, mango, tomatoes, and mozzarella and mix in a bowl. Season with 2 tbsp lime juice, salt, and pepper. Wash the arugula, shake dry, and fold into the salsa.

    Mix the honey, a pinch of chili powder, and 1/4 tsp salt. Rinse the salmon, pat dry, and brush with the honey mixture.

    Heat the butter in a pan, sear the salmon for about 2 minutes on each side, and drizzle with the remaining lime juice.

    Serve the salmon with the avocado-mango salsa. Baguette is a good accompaniment.
