Ingredients
- 1 red onion
- 1 avocado
- half a mango
- 150g cherry tomatoes
- 125g mozzarella
- 4 tbsp lime juice
- Salt
- Pepper
- Chili powder
- 50g arugula
- 1 tsp liquid honey
- 1 tbsp butter
- 2 salmon fillets (150g each)

Preparation
- 1Dice the onion, avocado, mango, tomatoes, and mozzarella and mix in a bowl. Season with 2 tbsp lime juice, salt, and pepper. Wash the arugula, shake dry, and fold into the salsa.
- 2Mix the honey, a pinch of chili powder, and 1/4 tsp salt. Rinse the salmon, pat dry, and brush with the honey mixture.
- 3Heat the butter in a pan, sear the salmon for about 2 minutes on each side, and drizzle with the remaining lime juice.
- 4Serve the salmon with the avocado-mango salsa. Baguette is a good accompaniment.
