    Wash the chives, shake them dry, and cut them into fine rolls.

    Beat the eggs in a bowl. Add the chopped chives and season with a pinch of salt and pepper. Whisk everything well with a whisk or a fork.

    Heat the vegetable oil in a pan over medium to high heat. Pour the egg mixture into the pan and spread it evenly by swirling. Once the edges are set, carefully flip or fold the omelette. Continue cooking until the omelette has reached the desired firmness, but is still slightly juicy inside.
