Finely dice the celery. Halve the avocados, remove the pit, and scoop out the flesh with a spoon. Then cut into approximately 0.5 cm cubes.

Halve the hard-boiled eggs. Place the egg yolks in a bowl and mash them smoothly with a fork, along with the Dijon mustard and lemon juice. Add the mayonnaise and mix everything well.

Finely chop the egg whites and fold them into the egg yolk mixture.

Chef's tip

For a creamier texture, you can also roughly mash the avocado with a fork instead of dicing it. A few drops of Tabasco will give the spread a pleasant spiciness.
