Preheat the oven to 200–205 °C. Line a baking sheet with parchment paper.

Arrange the toast slices on the sheet and toast in the preheated oven for approx. 6–7 minutes until golden brown. Flip halfway through to ensure both sides are crispy.

Meanwhile, place baby spinach, chives, ricotta, yogurt, and olive oil in a tall container. Season with salt and pepper and blend with an immersion blender until smooth and creamy.

Chef's tip

For an extra touch, you can garnish the toasts with fresh radish slices, cress, or sprouts. A small squeeze of lemon juice in the ricotta mixture also provides additional freshness.
