Preparation method
Preparing the dough
Thoroughly mix the wheat flour and table salt in a mixing bowl. Add the Greek yogurt, lukewarm water, and olive oil.
Knead everything by hand or with a food processor into a soft, supple dough (approx. 5–7 minutes). The dough should not stick to your hands. Shape into a ball, cover with a damp cloth, and let rest at room temperature for 15 minutes.
Making the aromatic cheese filling
Peel the yellow onion and dice it very finely. Melt half of the butter (approx. 20 g) in a pan and sauté the diced onion over medium heat until translucent.
Chef's tip
Turkish sıkma taste best fresh and warm straight from the pan, while the dough is soft and the residual heat turns the sheep's cheese wonderfully creamy.
They pair wonderfully with a traditional Turkish black tea (Çay) or a chilled glass of ayran.
