- 1 whole grain baguette (100 g)
- 100 g light cottage cheese
- 1 tbsp fresh chives (finely chopped)
- 1 pinch chili powder
- 50 g smoked salmon
- ½ small red onion (sliced into rings)
- 1 handful fresh arugula
- 1 pinch salt PL
- 1 pinch ground black pepper

Halve the whole grain baguette and then slice it lengthwise. Place the cottage cheese in a small bowl and lightly mash it with a fork to achieve a creamier consistency.

Stir the finely chopped chives, salt, pepper, and a pinch of chili powder (if desired) into the cottage cheese.

Generously spread the cottage cheese mixture onto the bottom half of the baguette. Top with smoked salmon, red onion rings, and arugula. Cover with the top half of the baguette and enjoy immediately.
